#5: Japan

 

👋Irasshaimase cooker! Today we will enter the beautiful country of the rising sun, also known as the home, where sushi and ramen were born, exactly those two dishes are the most mentioned when this country is related but the Japanese want to be known for many more things and they will be given the opportunity here.

🍣But before we begin with the new, the traditional must be pointed out. As we said, sushi was born here and thanks to the fact that such a simple preparation has been extended and modified as it has, it makes sushi a kind of national gastronomic symbol. Let's focus on what is truly authentic, sushi in Japan is as simple as being composed of two delicately prepared ingredients such as rice and fish. But that's exactly why it's the key to its luxurious success. 

Being a sushi chef will take a lot of time. Traditionally, becoming a sushi chef or Itamae will take ten years. This training proves that preparing sushi can be more complex than you think. On top of that, becoming a sushi legend or Itamae-san will take seven years, more or 17 years in total. (Nakamura, 2023, para 26)

As we can intuit, sushi is a highly respected type of culinary art in Japan and that makes it special and very different from the adaptations of other countries that add foreign ingredients to it to be more appetizing and abundant.

🍶Another star product that can be found in all Japanese homes is that it is an ideal complement to prepare or accompany delicious dishes is Soy sauce. Well, it's actually three indispensable products. Soy sauce, Mirin, which is basically a rice-based vinegar, and Sake, a 100-Japanese alcohol; They are famous for being in almost every traditional dish. They are very versatile to use and as a curious fact, Japan is one of the countries that consumes the most fish per year, so when it comes to preparing it, the trilogy of condiments is used regularly.

🍜As we mentioned before, there is another dish that could be considered more common although it has become more popular on social networks, such as Ramen. This was introduced by Japanese animation series or Anime in very clear examples such as Naruto or Dragon Ball, but the first one was the one that aroused curiosity about this dish that may seem simple in ingredients but... It's not that simple in terms of preparation.

🍖You will see the ramen is made up of 5 steps that can take up to 2 days to prepare! These are: the broth that goes from 12 to 14 hours of cooking, the meat or ¨
Chasu¨ in Japanese that takes 3 to 4 hours, the eggs that have to be marinated in a special sauce for a whole night and finally the noodles that if you make them from scratch could take you about 1 additional hour of preparation. Fortunately for me, I have been able to try both sushi and ramen, authentically Japanese in my country and let me tell you that both things give 9 to 10 golden spoons to this gastronomy, but I still have many more dishes to try.

🍳 Recipe: Onigiris 🍙

🍙Onigiris are a very tasty snack between meals, it has few ingredients and although it may seem challenging it is not, and I invite you to try it.

  • Sushi rice or short-grain rice (Make as much as you like, about 3 to 4 onigiris you can make two cups of rice)
  • Same amount of water as rice (2 cups of rice = 2 cups of water)
  • Mirin 1 tablespoon (only if you manage to get it, if you can't use a 1/2 tablespoon of white vinegar)
  • A pack of nori seaweed
  • A can of tuna, preferably in water
  • 2 to 3 tablespoons mayonnaise
  • Soy sauce for dipping
  1. The first step is to wash the rice to remove all the starch, you will know that this happens when you are washing it, the water released by the rice goes from white to transparent.
  2. With the rice washed, put it in a pot with the same amount of water, over high heat brings it to a boil and when this happens lower the heat to minimum and let it cook for 15 to 20 minutes until you notice that all the water evaporated. DON'T MOVE IT WHILE IT'S COOKING.
  3. With the rice ready, add the Mirin and mix just a little, cover the rice again and let it cool completely. While that's happening, continue mixing the tuna with the mayonnaise.
  4. When the rice is cold, with your hands always wet with water, take one or two tablespoons of rice and shape it into a ball, add a tablespoon of tuna with mayonnaise and try to enclose the filling with the rice, if you can't put another tablespoon of rice and with the filling hidden shape it into a triangle. Put some seaweed underneath for grip and more flavor and you're good to go. You can dip the onigiri in soy sauce and it will be delicious.
